When it comes to restaurants and hospitality, Spenser was born into it. His parents built and run a local, quaint, breakfast and lunch spot in northern New Hampshire. Spenser’s curiosity for all things culinary took him to high school cooking competitions, the Culinary Institute of America and, ultimately, to one of Boston’s most prestigious restaurants, Sonsie. However, he quickly found that he enjoyed customers as much as he enjoyed cooking. He fulfilled his passions for food and people with management roles at Lansdowne Resort, running the AAA Four-Diamond On The Potomac and Stonewalls Tavern. After a brief stint at Lincoln, in DC, he landed with the Vermillion team where he manages the restaurant’s front-of-house operations.

Chef William Morris brings over 18 years of culinary experience to his position as executive chef of Vermilion restaurant in Alexandria, VA. A fixture in the Washington, D.C. culinary scene for years, Morris has spent time in many of the city’s most prominent and famous kitchens including The Palm, PS7's and BOURBON STEAK. A Northern Virginia native, Morris continues to celebrate the very best product from the region with his simple, straightforward and honest cooking.
